An Italian inspired grilled cheese sandwich.

This Italian inspired grilled cheese sandwich is very simple with only four main ingredients, but it is bursting with flavour and textures.

Who doesn't love perfectly ripened ruby red tomatoes, fresh creamy mozzarella and fragrant basil. Of course combined all together and wedged between slices of baguette makes a delicious grilled cheese sandwich.

The mozzarella melts into a creamy and gooey mess. The heat on the tomatoes helps to reduce more of their sweet juice and the powerful basil flavour is delectable alongside the golden toast.

These grilled cheese sandwiches are perfect for a midnight snack, or to impress some over lunch (as it is so simple and easy, but rather fancy and delicious).
