Milk Chocolate & Salted Caramel Cookies.


I currently have a slight obsession with salted caramel, which meant that I had to create a delicious cookie recipe to bake and share. 


These cookies are incredibly easy to make and does not require additional salted caramel to made on the stove top - as this can easily turn into a nightmare. 


When baking cookies, you have to make sure to only bake them long enough to be golden and very slightly crisp, because once you remove them from the oven they will continue baking. The end result should soft, chewy and oozing with chocolate chunks and caramel drizzle. 


I use an ice-cream scoop to perfect the size of my cookie. It is ideal to also roll the ball between your hands in order to gain a smooth surface, which should prevent the cookie from bursting out in every direction once in the oven - but you never know what will happen behind the oven door as soon as it hits the heat! 







Milk Chocolate & Salted Caramel Cookies. 
225g unsalted butter, at room temperature 
220g caster sugar
220g brown sugar 
2 eggs, lightly beaten 
1-teaspoon vanilla extract 
1-teaspoon bicarbonate of soda
1-teaspoon baking powder
500g plain flour 
1.5-teaspoons sea salt + extra 
400g milk chocolate, roughly chopped (no chips) 
400g caramel chocolate 

1. Preheat the oven to 170-degrees and line cookie pans with parchment paper. 
2. Sift the flour, bicarbonate of soda and baking powder - stir in the sea salt. 
3. Beat the butter and sugars together using an electric mixer until smooth and creamy - about three minutes. 
4. Add the eggs one at a time beating well after each addition. Then add the vanilla extract and mix well. 
5. In three additions add in the dry mixture, mixing until just combined. Lightly fold in all the chocolate. 
6. Using an ice-cream scoop or your hands, form balls of dough - about 60g per cookie. 
7. Bake six per tray (vary according to your tray size) and bake for 15-18 minutes or until golden around the edges. Allow a few minutes to cool before transferring to a wire rack to cool completely. 

Enjoy with a cup of coffee of a glass of milk!
