Cranberry & Chocolate Cookies.

A lovely cranberry and chocolate chip cookie recipe, which is filled with oats and spices is heading your way right now!

This recipe is really easy if you were given it as a gift, as well as preparing it all from scratch. You could step past the process of creating the jar of dry ingredients as a gift and fill it with baked cookies instead. 



The texture from the oats, the sweetness from the sugars and chocolates, with the burst of freshness from the cranberries and the kick of spices, certainly makes this cookie packed with flavour and goodness. 


Cranberry Choc-chip Cookie
Makes approximately 20.  

1 cup plain flour
1/2 teaspoon baking powder 
1 cup rolled oats (slightly blitz in a food processor, if you want a finer texture.) 
1/2 cup brown sugar 
1/3 cup caster sugar 
2 teaspoons mixed spice 
1/2 cup dark chocolate chips 
1/4 cup dried cranberries 
115g unsalted butter, melted 
1 egg, lightly beaten 
1 teaspoon vanilla extract 

1. Preheat the oven to 180-degrees and line baking trays with parchment paper. 
2.  Place all of the dry ingredients into a bowl. 
3. Add the melted butter, egg and vanilla extract to the bowl and mix thoroughly to combine. 
4. Roll tablespoons of the mixture into balls (or use an ice-cream scoop) and place on the prepared baking trays. 
5. Flatten slightly and bake for 8-10 minutes or until golden, but slightly soft in the centre. 
6. Transfer to a wire rack to cool completely.
